Jenny D's Baked Zucchini Fries

I loved fried zucchini as a child and would always have it in restaurants. As you may know, it is not exactly healthy. Here is my at home creation that has all the flavor you could ask for to satisfy that craving! Enjoy!

Instructions
  1. Preheat oven to 425 degrees. Wash and dry zucchini. Cut into strips like thick cut french fries.
  2. Place in a large ziploc bag.
  3. Drizzle avocado oil in bag. Seal and shake to coat zucchini well.
  4. Sprinkle salt in bag and shake again.
  5. Add almond meal, nutritional yeast and arrowroot starch and then shake again to coat evenly.
  6. Pour onto a pan lined with parchment paper making sure you only have a single layer so that they do not get soggy.
  7. Bake at 425 degrees for 15 - 18 minutes until golden brown.
