Tortilla-less Chicken Tortilla Soup

Instructions
  1. Put chicken in a large pot with celery, carrots, stock and salt.
  2. Bring to a boil over high heat and boil for about 20 minutes or until chicken is no longer pink and cooked through.
  3. Remove chicken from pot and let cool.
  4. In a saucepan, heat ghee and add onion.
  5. Cook 5 minutes until soft, add garlic and jalapeno and cook 3 more minutes.
  6. Add to the stock pot along with the cans of tomoates (with juices).
  7. Cook for 5 minutes. Meanwhile, shred the chicken with your hands.
  8. Turn off heat, add chicken, cilantro and lime juice.
  9. Stir well and serve. Top with avocado if desired. Enjoy!!
