Sauteed Beet Greens with Fresh Beets

  1. Cut the beet greens off of the beets about 1 inch above beet. Wash greens and beets thoroughly. Put beets in a pot and cover with water. Bring to a boil and boil for approximately 20 minutes or until a fork goes through them easily.
  2. While they are cooking, cut the beet greens into 1-inch strips and chop the garlic. Put oil in a saute pan to coat the bottom, add greens and garlic. Cook over medium heat until greens are wilted and tender, 5-8 minutes. Turn off heat and add 1/2 of lemon juice, lemon zest, red pepper flakes, salt and fresh ground pepper.
  3. When beets are done, drain them and immediately put them in a bowl of ice water to cool them down. When cool, peel them over a trash can and then put the on a cutting board covered in wax paper to slice. The wax paper will keep them from staining your cutting board.
  4. Put sliced beets in a small bowl and toss with remaining lemon juice. Warm up the greens quickly in the saute pan and plate them. Top with the sliced beets and serve.
