Roasted Asparagus Soup with Lemon Zest
Instructions
  1. Preheat oven to 425. Cut ends off of asparagus and wash. Place on a baking sheet and top with chopped garlic and onion. Bake for 15-20 minutes or until asparagus is tender. Place half of the asparagus, garlic, and onion in the blender and add half of remaining ingredients. Blend until smooth and pour into large pot. Repeat with remaining ingredients. Heat on med-low until warm. Top each bowl with a small amount of lemon zest for flavor and color.
