Quick & Easy Quinoa with Avocado and Tomato
This tasty and satisfying recipe is great for a quick, filling vegan meal or as a side dish. It pairs well with a simple fish or grilled chicken but is wonderful with a salad or by itself. You can eat it hot off the stove, or refrigerate and eat it cold for an on the go lunch the next day (just wait to add the avocado so it doesn't brown).

  1. Cook Quinoa according to package directions using water or your favorite broth. Once cooked, divide between dishes (serves 2 as a main dish, 4 as a side dish). Divide tomatoes and avocado evenly between the servings. Then drizzle with flax seed oil and liquid aminos. Sprinkle chili powder on top. Note: If you are going to make ahead and eat it cold, wait and cut avocado just prior to eating so that it does not brown.
