"Not-So Pickled" Beets

  1. Cut stems off of beets (about 1 inch above beet)
  2. Wash beets thoroughly.
  3. Put whole beets in a pot and cover with water.
  4. Bring water to a boil over high heat and continue boiling for approximately 20 minutes (depending on size of beets), testing occassionally to see if a fork goes through beet easily.
  5. Once fork goes through beets easily, remove beets from boiling water and place in a large bowl of ice water.
  6. Once cool to touch, hold beets one at a time over trash can and peel off skin with your hands.
  7. Slice beets thinly and place in a bowl.
  8. Drizzle with lemon juice and stir to coat.
  9. Enjoy!
