Iron Boosting Lentils
Instructions
  1. Rinse lentils and put in pot with water and vegetable broth concentrate. Bring to a boil and boil for 5 minutes. Add salt, cover, reduce heat and simmer for 30 minutes or until lentils are tender. Add spinach and tomatoes and stir until mixed. Turn of heat and cover, let sit for 5 minutes until spinach is wilted slightly. Add cilantro and lime juice. Eat as a side dish or put in corn tortillas to make vegetarian tacos. Can also be served on a salad.
