Vanilla Mango Chia Seed Pudding
Instructions
  1. Put coconut milk, vanilla, and salt in a saucepan and heat while stirring until coconut fat is well incorporated. Take off heat and add chia seeds and stir. Pour into four small glasses or jars. Put in refrigerator overnight to set. When pudding is firm, put frozen mango in food processor and pulse into just slightly chunky sauce. Pour on top of cups of pudding. Toast coconut until golden and sprnkles on top of mango sauce
