Roasted Poblanos with Quinoa and Black Beans
Instructions
  1. Preheat broiler in oven. Lay washed poblanos on a pan covered in foil. Cook quinoa according to package directions. While quinoa is cooking, put poblanos under broiler and turn them every few minutes as they brown and skin peels. Heat vegetable broth in a pot an add mole sauce. Stir over low heat until completely combined. Add quinoa, black beans, salsa, onion, hot sauce, and cilantro to the pot of mole sauce and stir well. Cook over low heat until hot. When poblanos are done, pull the stem out and stuff with quinoa mixture.
