Ginger Citrus Roasted Chicken

Instructions
  1. Preheat oven to 325 degrees.
  2. Remove chicken from all wrappings and remove neck and giblet packet. Rinse and pat dry. Place in roasting pan with lid.
  3. Lift skin and rub 1 Tbsp of seasoning blend between the skin and the meat of each breast.
  4. Cut lemon in half and squeeze some of the juice over the skin of the chicken.
  5. Place lemon halves and onion inside cavity of the chicken.
  6. Sprinkle remaining seasoning on the outside of the skin.
  7. Cover and cook 2 1/2 hours or until internal temperature reaches 175 degrees.
  8. Remove lid and cook another 20 - 30 minutes until skin is golden brown.
  9. Remove from oven and take lemon and onion out of cavity. Slice and enjoy!
