Preheat over to 350 degrees. Oil 3 small loaf pans using coconut oil in place of shortening. In bowl, mash banana. Mix in the maple syrup, oil, and vanilla. Add the dry ingredients and mix well. Stir in the nuts. Bake for 30 minutes or until golden on top and toothpick inserted in center comes out clean. Let cool slightly in pan and then flip out onto wire racks to cool completely.
