Ingredients

Onions
chopped

coconut oil
Extra Virgin, Unrefined

Butternut Squash
cubed

cup fresh shredded basil or freeze-dried basil

raw cashews
Fresh cracked pepper

dry white wine
Instructions
Saute onion in coconut oil over medium heat for 5 minutes or until soft and slightly browned.
Add next 6 ingredients and bring to a boil over high heat.
Cover, reduce heat to low and simmer for 20 minutes or until squash and potatoes are tender.
Turn off heat and add wine, coconut milk and ginger. Stir.
Process in blender in 4 batches adding 1 T of raw cashews to each batch and blend until smooth.
Return to pot, add pepper to taste, heat and enjoy!
